Spinach Lasagna Roll Ups

I love a good lasagna, but sometimes ya just need to switch things up a bit. These spinach lasagna roll ups are a favourite at our house. They're simple, quick, and super tasty! Another bonus? They also freeze well.


To Make:

1. In a bowl mix together:

-  1/2 cup shredded mozza cheese
-  1 Tub of ricotta cheese (454g)
-  2 - 2 1/2 cups of chopped spinach
-  1 tsp of minced garlic
-  A shake of salt & pepper

2. Cook and drain 10 lasagna noodles. *Note: Sometimes I cook a couple of extra noodles incase I have more filling; or sometimes I just load some up with extra filling. Whatever works!

3. Pat noodles dry & spread cheese mixture the length of each. Roll up and place seam side down in greased 9x13 pan.

4. Cover roll ups with pasta sauce of your choosing & shred more mozza cheese on top. Cover pan with foil.

5. Pop in oven at 350ยบ (preheated) for approx. 30-40 min or until heated through & sauce begins to bubble (more or less time may be required depending on your oven). Remove foil midway through baking time.

6. Enjoy! Lots of times we'll have salad along side of these. Garlic bread doesn't hurt to serve with them either!
